gooey deliciousness
This is my second post on baking in one week. ((And this also might be a small call for help. Please intervene if you notice I'm getting wider.))
These gooey babies were another Pinterest recipe that I had to try! I tested them on Seth and Toby. Seth loved them but Toby prefers my original chocolate chip cake batter cookies ((the fluffier sister to this recipe)).
My opinion: These cookies lived up to my expectations, and I will definitely make them again! The pudding centers add just enough softness and hint of flavor that make the cookies stand out.
Cake Batter Pudding Cookies
The Lineup:
1 1/2 sticks butter
3/4 cup light brown sugar
1/4 cup sugar
1 (3.4 oz) package instant vanilla pudding mix
3/4 cup Funfetti cake mix
2 eggs
1 teaspoon pure vanilla
1 teaspoon baking soda
2 1/4 cups flour
1/2 teaspoon salt
sprinkles
How-To:
1. Preheat oven to 350 degrees.
2. Stir together flour, salt and baking soda and set aside. In a large separate bowl, mix butter and sugars together ((if necessary, soften butter in microwave)).
3. Add in pudding package and cake mix and beat until well blended. Add eggs and vanilla and mix until smooth. Then add flour mixture slowly until well incorporated. ((I actually dumped my batter into the bowl with the flour mixture, then mixed until smooth. It works just fine either way!))
4. Sprinkle. ((Hey I heard you were a wild one.))
5. Roll into 1-inch balls and place on greased baking sheet.
6. Bake in preheated oven for 10-12 minutes.
Serve and enjoy!
This recipe makes about 75 cookies. I made 50 cookies using 2 baking sheets, then put the leftover batter in the freezer. I would be happy to tell you how the batter stands up to thawing and baking, but I've already turned it into my midnight, too-lazy-to-bake, love-me-some-cookie-batter snack. ((It's great for that purpose, too!))
