I've never really taken the time to cook. And I've never really had the knack for it.
Not at least until a month ago ((7 months from wedding time)) when I decided I better start learning how to make some simple and well-worth-my-time recipes. So far, Toby hasn't been complaining! Smart guy.
I've tried a few great recipes in the past month, but tonight I actually took the time to take some snapshots.
((And the recipe I chose happened to be a really great model for my Nikon.))
In honor of the Super Bowl, I chose an easy recipe that I knew would be a relief from the pizza and hot wings but would also appeal to a crew of ten college guys. It's a sweet twist on the traditional chips and dip at every football watching party.
Fruit Salsa with Cinnamon Chips
The Lineup ((fruit salsa)):
2 kiwis
2 Golden Delicious apples
6-8 ounces raspberries
1 (16 oz) carton of strawberries
3 tablespoons white sugar
2 tablespoons light brown sugar
3 tablespoons fruit preserves, any flavor (I recommend strawberry!)
The Lineup ((cinnamon chips)):
10 (10 inch) flour tortillas
melted butter or butter flavored cooking spray (I used PAM cooking spray)
1 cup white sugar*
2 tablespoons cinnamon*
((*to make the cinnamon sugar))
How-To:
1. After peeling kiwis and coring apples, dice the kiwis, apples and strawberries. In a medium-sized bowl, mix all fruit with white sugar, brown sugar and fruit preserves. Cover and chill in refrigerator for at least 15 minutes, or freeze for 10 minutes.
2. Preheat oven to 350 degrees.
3. Cut tortillas into wedges and arrange in a single layer on large baking sheet. Coat top side of wedges with melted butter or spray with butter flavored cooking spray. Sprinkle wedges with cinnamon sugar until covered. Spray again with cooking spray (not necessary if using melted butter).
4. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges.
5. Serve with chilled fruit salsa, and enjoy!
This recipe was so easy, and all of the guys loved it! If you decide to make it, please let me know what you think! This appetizer can be customized in so many ways ((original recipe here)), and I'm interested to know if anyone uses a different variety of fruits/ingredients. I think next time I'll add some pineapple!
